New Blood, Old Vines : An Evening with Guillaume Boillot

On September 30th, Melchior18 invites a select circle of guests to IGNI in Mayfair, one of London's most talked-about tables, for a private dinner in the presence of Guillaume Boillot himself.

Domaine Camille & Guillaume Boillot is one of Burgundy's youngest and most closely watched estates, born only in 2021 from the union of two great winemaking lineages. Guillaume spent over a decade shaping the reds of his father Henri Boillot's celebrated domaine before setting out to write his own story, while Camille brings five generations of Pommard winemaking heritage to the project. Together, across parcels in Meursault, Puligny-Montrachet, Volnay and Pommard, they are crafting wines in such limited volumes that they rarely leave Burgundy, let alone reach a table outside of it.

The setting will match the occasion: IGNI, where every course is cooked entirely over an open wood fire under the direction of chef Theo Clench, offers one of the most distinctive dining experiences in London, a fitting stage for wines this precise and this scarce.

For the ones who follow Burgundy closely, this is a chance to taste a domain still being defined, directly from the source, and to hear from Guillaume Boillot himself the choices behind each parcel and each bottle.

Parcel by Parcel: The Secret of Camille Thiriet

"This vineyard is like my garden."

It's how Camille Thiriet describes one of the plots she tends in the Côte de Nuits, and it says everything about the way she works: not as a winemaker imposing a signature style, but as someone who lets each parcel speak for itself.

This October, Melchior18 will travel to Singapore for a tasting dedicated to the wines of Camille Thiriet, with the opportunity to meet her in person.

Camille did not inherit a domaine. She began in 2016 with a single vintage of just 2,000 bottles, vinified in a garage behind her parents' guesthouse in Comblanchien. Today, the domaine spans six hectares across Corgoloin and Comblanchien, two lesser-known villages on the southern edge of the Côte de Nuits, farmed with a deliberately light hand, some vines worked by horse, wildflowers left to grow between the rows, and each parcel bottled and named on its own rather than disappearing behind a generic appellation.

Guests will taste a selection of these wines alongside Camille herself, and hear directly from her the choices, doubts and discoveries behind each bottle.

Wine dinner with one of Burgundy’s elite : domaine Robert Groffier Père & Fils

Based in Morey-Saint-Denis yet owning almost no vines there, Domaine Robert Groffier has built its reputation next door, in Chambolle-Musigny, as the largest single owner of Les Amoureuses, widely regarded as the finest Premier Cru in all of Burgundy and prized above all for the elegance it brings to Pinot Noir.

On November 9th, Melchior18 will welcome Nicolas Groffier, the fourth generation to lead the domaine, to Singapore for a dinner dedicated to the estate.

Alongside Les Amoureuses, the domaine bottles two of the Côte de Nuits' greatest Grand Crus, Bonnes-Mares and Chambertin Clos de Bèze, wines built on precision and silk rather than power, and ranked among Burgundy's most difficult to secure at any price. In the cellar, the approach is deliberately unhurried: manual harvests, indigenous yeasts, ageing in French oak, and, since 2014, a discipline few can afford, holding back half of each vintage until it reaches a fuller, more graceful stage of maturity.

Guests will taste a curated selection of these exceptionally elegant wines over dinner, and hear directly from Nicolas the philosophy behind a domaine now counted among the very finest names in Burgundy.

Following Singapore, Melchior18 brings the same evening with Domaine Robert Groffier to Kuala Lumpur on November 10th, with Nicolas Groffier, the fourth generation to lead the domaine, once again at the table.

The dinner will be held within the private members club of Smith & Wollensky, the storied New York steakhouse making its Malaysian debut, where a serious cellar and a sommelier-led wine programme are quickly establishing it among the region's most refined tables for collectors.

Egly-Ouriet: The Essence of Champagne

On November 19th, Melchior18 will host a wine dinner at TATE Dining Room in Hong Kong, in the presence of Clémence Egly, who today runs Champagne Egly-Ouriet alongside her brother Charles, dedicated to one of Ambonnay's most revered grower-producers.

At Ambonnay, the family farms its vines at less than half the yield Champagne's own rules allow. Its wines rest for years on the lees before release, from 6 to 9 years for Les Crayères alone, a patience almost unheard of even among the region's finest growers. Sourced from Grand Cru vineyards across Ambonnay, Verzenay and Bouzy, the house's wines are often described as Champagne's closest answer to a great Burgundy red, an impression only reinforced by Les Crayères itself, a parcel of ungrafted, pre-phylloxera vines planted in 1946 that remains one of the last of its kind in the region.

The evening finds a fitting stage at TATE. Two Michelin stars, a member of Relais & Châteaux, and a reservation among the hardest to secure in Hong Kong, TATE is led by Vicky Lau, a former graphic designer turned chef and the first woman in Asia to reach two Michelin stars. Each dish on her menu is named an "Ode", a tribute to Pablo Neruda's poetry, built entirely around a single ingredient, the same instinct that runs through Egly-Ouriet's wines: one parcel, one story, told without compromise.

Where legacy meets rebellion vol.2: Domaine Prieuré Roch

Every bottle of Domaine Prieuré Roch carries an Egyptian hieroglyph on its label. Henri-Frédéric Roch had lived in the Nile Valley before turning to wine, and found there a way of saying what no French word could, an idea that felt entirely out of place in 1980s Burgundy, and still does today.

This January, one year after the first edition, Yannick Champ returns to New York for another wine dinner dedicated to the domaine he has led since Roch's death in 2018, after training at his side since 2002.

Roch, then co-director of Domaine de la Romanée-Conti, founded the estate in 1988 on parcels including Clos Goillotte, once the private vineyard of the Prince de Conti. The wines are made without a single gram of added sulphur at any stage but one, fermented in whole clusters and foot-trodden by hand, methods few estates in Burgundy have ever dared to follow this far.

Burgundy Temptations - Summer Tour

From July 8th to 10th, a select circle of Melchior members journeyed into the heart of Burgundy, a land where precision meets poetry and where some of the world’s most coveted wines are born from the quiet dialogue between vine, stone, and time.

Over three days, we entered domaines that have defined the spirit of the Côte d’Or, from the storied slopes of the Côte de Nuits to the graceful contours of the Côte de Beaune, including the distinguished estates of Prieuré Roch, Robert Groffier, Guillaume Boillot, Yann Durieux and more.

Along the way, private tastings and privileged conversations offered rare insights into the philosophy and vision of Burgundy’s most respected vignerons. We walked legendary parcels, explored cellars and discovered how each gesture, from the pruning shears to the fermentation vat, shapes the character of the wines.

Bordeaux Unveiled - A Grand Cru Immersion

During this journey, we stepped inside estates that have shaped the identity of both banks, places where gravel, clay, limestone, and centuries of savoir-faire come together to create wines of extraordinary character.

Throughout the tour, private tastings and intimate conversations offered a rare glimpse into the philosophy and artistry that guide Bordeaux’s greatest winemakers. We moved from iconic chais to peaceful parcels of vines, discovering how each detail, from soil to cellar, contributes to the personality of these remarkable wines.

Bubbles Affair - Champagne July 2026

On July 6th and 7th, a chosen circle of Melchior guests travelled through the lands of Champagne. Beneath the warmth of midsummer, we explored terrain where mineral layers and long-held traditions come together to create bottles of remarkable subtlety.

During this summer escape, we crossed the thresholds of producers whose influence has shaped the character of this northern region, from the wooded plateaus near Reims to the pale, sloping expanses stretching across the Côte des Blancs and the winding Marne Valley. Underground, vast chalk corridors stretched like silent cathedrals, spaces shaped over centuries where stillness and precision guide the slow evolution of wines resting in the dark.

Throughout our time there, exclusive encounters and guided tastings offered rare insights into the creative approach of Champagne’s producers. We wandered through emblematic plots, descended into cool galleries lined with patiently ageing bottles, and discovered how each decision, from harvest timing to blending choices, shapes the greatest cuvées.

On June 16th, a group of guests gathered at Le Sixth in New York for an exclusive tasting evening dedicated to Domaine Chandon de Briailles. Over the course of the evening, the wines of this prestigious Burgundy estate took center stage, offering a rare opportunity to explore the full range of the domaine's expression across some of the appellation's most prestigious terroirs.

Bespoke Bordeaux Private Wine Tour

June 2, 2026

From June 2nd to 4th, a group of guests embarked on an exclusive three-day journey through Bordeaux's most legendary wine estates. The adventure began in Saint-Émilion, where the group settled in for two nights at the elegant Hôtel de Pavie.

Over the following day, the group was welcomed at some of the appellation's most coveted addresses: Château Ausone, with its cellars carved into the limestone cliff, and Château Cheval Blanc, where lunch followed the tasting on the banks of the Saint-Émilion plateau. Evenings were spent discovering the village, with dinners at the two-Michelin-starred La Table de Pavie and at Le Logis de la Cadène. The final day took the group to the Pessac-Léognan appellation, with visits and tastings at Château Les Carmes Haut-Brion and Château La Mission Haut-Brion.

We gathered at Appetite on 21 May in Singapore to open a selection of bottles from both banks, taste them side by side, and let the conversation follow. No agenda beyond the wines themselves, where they come from, what the year gave them, and where they might still be going.

Burgundy - Battle of the giants | Domaine C&G Boillot and Domaine Robert Groffier

An evening built around two readings of Burgundy that continue to shape the conversation today: Robert Groffier and Camille & Guillaume Boillot.

In Los Angeles, we brought together wines that do not seek to impress, but to express with precision what their terroirs allow. On one side, Groffier, whose parcels in Chambolle-Musigny and Bonnes-Mares have long defined a certain idea of texture and depth in the Côte de Nuits. On the other, Boillot, with a more discreet but equally exacting approach, where Meursault is drawn with tension, clarity and restraint.

We have built this dinner as a progression across regions and sensibilities. From the tension and clarity of Meursault by Camille & Guillaume Boillot to the layered depth of Groffier’s Bonnes-Mares, extending into Piedmont with Gaja’s Sperss, each wine carries a distinct relationship to structure, time and place.

The kind of evening where bottles are opened without haste, where each wine finds its place naturally in the rhythm of the table. Conversations move as the wines evolve. There is no script, only a shared attention to what is in the glass, and what it reveals.

A small group of collectors gathered at Bon Restaurant - an intimate setting of rare warmth - to explore a thoughtful selection of the estate’s wines, in a setting that allowed real conversation and attention to detail.

We were fortunate to have Yannick Champ, Co-Managing Director of the domaine, with us that evening. His presence brought clarity to the tasting, offering insight into the estate’s approach - organic and biodynamic viticulture, gentle extraction, and a clear focus on purity of expression.

In October, a small circle of Melchior members gathered in Paris for an evening dedicated to one of the most legendary voices of Saint-Émilion.
In the intimacy of the Michelin-starred Épisodes, in the heart of the 17th arrondissement, we opened a rare selection of bottles from Château Ausone, a domaine where precision, heritage, and quiet mastery have shaped some of the most profound wines of Bordeaux.

We were honored to welcome Édouard Vauthier, co-owner of the estate, who guided us through the soul of Ausone: its history, its terroir, its uncompromising philosophy, and the timeless beauty of its vintages.

This private dinner was a moment suspended in time - an encounter marked by true conversation, shared emotion, and the rare privilege of exploring one of Bordeaux’s greatest wines in the presence of the family who brings it to life.

In November, a small group of Melchior members returned to Burgundy, right after harvest and vinification, and just before the Vente des Vins excitement began.

We visited some of our dearest partners - Domaine Robert Groffier, Domaine Prieuré-Roch, Domaine Henri Gouges, and Yann Durieux (Recrue des Sens) - to taste the new vintages and share moments of true connection.

The journey ended at La Table du Square with a special winemakers’ dinner alongside Thibaud Clerget, Guillaume Boillot, and Arthur Clair. A night celebrating friendship, craftsmanship, and the spirit of Burgundy at its most personal.

Bordeaux Icons Summer Promenade
