Pascal Agrapart is one of the most respected growers in the Côte des Blancs. Based in Avize, a Grand Cru, he farms approximately eleven hectares across Avize, Oger, Oiry and Cramant. His biodynamic approach and parcel-specific vinification produce Blanc de Blancs of remarkable mineral precision and tension.

Terroirs

Avize forms the heart of the domaine. Deep chalk soils characteristic of the Côte des Blancs give the Chardonnays their tension and verticality. Each cuvée expresses a specific site: Vénus (Avize), L'Avizoise (old vines Avize), Complantée (multi-variety parcel).

Viticulture

Biodynamic approach. Ploughing, composting, biodynamic preparations. Controlled yields. Manual harvest with strict selection.

Vinification

Fermentation in oak barrels (mainly Burgundy pièces) and enamel-lined tanks. Indigenous yeasts. No malolactic fermentation.

Élevage

Extended lees ageing, three to seven years depending on cuvée. Very low dosage (extra-brut to brut nature).

Style and ageing potential

Champagnes of crystalline purity combining mineral tension, complexity and depth. Single-vineyard cuvées (Vénus, Avizoise) rank among the finest Blanc de Blancs in Champagne. Ageing potential of ten to thirty years.
