Le Mesnil-sur-Oger, Côte des Blancs - The rarest Champagne in the world

Salon is unique in the Champagne universe. Founded in 1911 by Aimé Salon, the house produces only one wine: a vintage Blanc de Blancs exclusively from Le Mesnil-sur-Oger. Since its creation, only approximately 37 vintages have been declared. Non-retained years are declassified to Delamotte, the sister house. This radical minimalism – one terroir, one grape, one vintage – makes it the rarest and most sought-after Champagne on the market.

Terroirs

Le Mesnil-sur-Oger is the sole source. A Grand Cru of the Côte des Blancs, the village rests on deep chalk, giving the Chardonnays exceptional mineral tension and ageing capacity.

Viticulture

Parcels are selected from the finest in Le Mesnil. Meticulous viticulture prioritizing absolute grape quality.

Vinification

Fermentation in stainless steel to preserve Chardonnay purity. No malolactic fermentation, preserving the natural acidity that permits the wine's remarkable longevity.

Élevage

Lees ageing lasts a minimum of ten years. Some vintages rest well beyond fifteen years before disgorgement. Minimal dosage.

Style and ageing potential

Salon produces Champagnes of unrivalled precision and longevity. In youth, the wines show austere, almost mineral tension. With time, they develop extraordinary complexity – notes of nuts, iodine, acacia honey and chalk. Ageing potential of thirty to fifty years or more for great vintages.
